SFC: Week 2 – Portobello & Avocado burger
For the 2nd week of my Summer Food Challenge I made Portobello & Avocado burgers!! They took quite awhile to make since I usually never cooked portobello mushrooms before. I also didn’t make it according to the recipe I found online but now that I do have pesto sauce…I really should. Next time I want to use a whole mushroom instead of slicing them up and all. I think it would cut the cook time in half as well as hassle of prepping. If anyone wants the recipe or instructs let me know I’ll email you it! Anyways, onto photos and yummyness. (:

Two small burgers with portobello, avocado and lettuce. Yummy!

They don’t look meaty but they are filling because of the avocado.

I used all the left overs and made guacamole. It’s a nice side dish to the burgers itself!

portobello burgers are so good! i’m always tempted to get them if i see them on a menu, but i don’t think i’ve seen them made with avocados before… that sounds delicious.
