SFC2: Baked Assorted Seafood Casserole

Success! …Well half-success. I finally got some time on my hand to accomplish the first thing on my Summer Food Challenge 2, Baked Assorted Seafood Casserole. It was good but the only thing that bothered me was the cheese. It turned out so crispy as if where on top of cheese bread. I wanted cheese to be like chewy like the one on pizza. Did I just bake it for too long, does anyone know? I popped it in the oven for 350 degrees for 40 minutes. I wish I put more seafood but I ran out. Ahh, what a disaster. Maybe it wasn’t a success afterall? But it was still delicious nonetheless. Since it’s the first time I did anything like this, I’ll give myself a pass.


Mixed Seafood, Bread Crumbs, Cream of Mushroom Soup, Mixed Veggies, Cheese, Rice, Milk


Fry that baby! I mean rice. …Yeah fry that seafood, rice and veggie together as if you’re doing fried rice.


Mix rice with soup and top it off with bread crumbs and cheese.


Why is my cheese so crunchy?!


I did not have a casserole dish. …Only a pie dish. SAME DIFFERENCES.

My would-be Dolce Vita

Remember how I blogged about how hauled in an amazing pair of Dolce Vita on sale the other day for only $29.99 when they are retailed for $129.99? Well I was going to reveal them this weekend but the thing is… my package got stolen. I ordered over $150 worth of products to get free shipping and then now, I have nothing. My package was delivered and when I went to get it when I got off work it wasn’t there. I called the leasing office and my neighbors in case they delivered it there, nothing. I checked behind the staircase, the bushes, everywhere and anywhere. Nothing. I am rather disappointed. I’m pretty sure that Urban Outfitters will just resend the same package free of cost because they have great customer service but the thing is, those shoes are not out of stock. They can’t even send them to me even if they want to… The only time I’m will the splurge of a good buy and then this happens. I’m very sad.

But anyways, here are what they were supposed to look like.

Aren’t they the perfect summer wedges? But now I won’t have them. I am so heartbroken.

In the Process of Moving!

I apologize for the lack of post lately! I am in the process of moving out of my Newport Beach apartment to back home with my parents …to back to Irvine for the rest of summer/school year into my new apartment with some friends. I know it’s a lot of packing, moving and unpacking so I’ve just been so caught up! Do not worry, I did take a little time off this morning and did some online shopping. I hauled in an amazing pair of Dolce Vita on an amazing sale price of only $29.99 when they are retailed for $129.99. I know, I know. I am kind of amazing. When they come I will surely make a post! No photos of the shoes for now, I want to keep you all waiting!

Oh and another note, I dyed my hair part blonde. …Well, I bleached it part blonde. I have always thought that blondes have more fun (and it’s totally true). I’ve been blonde before and I had a blast going out almost every night and being adventurous and spontaneous. I dyed it back to brown because the roots were being hideous and I just ended up being a granny and stayed home all the time. But it is summer and this blondie is back in action! The girl on the left is my little sister from the sorority. She also went blonde but ombre style.

It’s not blonde blonde. I left bleach in there for an hour and even heated it and it only got to this. But considering how damaging it is, maybe I’ll wait awhile before I bleach it again to get it even more blonde. Part of me wants to go full blonde. There is no better time than to do it during the summer of your college years, right?

Summer Food Challenge: Part 2

It’s summer again and I was thinking how I did the Summer Food Challenge last year and really enjoyed it. Soon after, it launched my passion for cooking. Not only has it made me want and like to cook it also made me want to eat and like to eat, sometimes too much for my own good like a food enthusiast almost! This summer around I want to try something new or even more complex since after a full year of cooking almost every day I think my cooking skills have improved. So here’s the planned list of the time being. I did 5 last time because I had 5 weeks of summer but this time I want to do more so 10 new items to add to my recipes inventory in 5 weeks.
